Mom made me my favourite waffles today as a celebration for being back.

110g plain flour
325ml milk
1 egg
1 1/2 tsp olive oil
1/2 tsp salt

Whisk the egg white until foamy. Mix milk, egg yolk, oil and salt well. Pour into sifted flour and stir. Carefully fold into foamy egg whites. Use a 1/2 cup to pour into waffle iron. let it cook for 5-6 minutes each. It should make about 6 waffles.
